Pork Souvlaki Pita

Ingredients

Marinade:
  • 1 clove of garlic, chopped
  • 1/2 red onion, sliced
  • 3-4 tablespoons of olive oil
  • 1-2 tablespoons red wine vinegar
  • 1 tablespoon Green Garden Organic Freeze Dried Oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1/2 tablespoon of honey
  • 1 pork tenderloin, cut into medium chunks
To serve:
  • 4 pita breads
  • Tzatziki sauce
  • 1 red onion, sliced
  • 1 tomato, sliced

  1. Into a large bowl, mix the garlic, red onion, olive oil, red wine vinegar, Green Garden Organic Freeze Dried Oregano, thyme, rosemary, and honey. Add in pork and mix until thoroughly coated with marinade. Cover the bowl and place into the fridge and let marinade for at least 2 hours, ideally overnight.
  2. When ready to cook, thread the pork cubes onto skewers. If using a gas grill and wooden skewers, make sure to soak skewers in water 30 minutes prior, to make sure they don’t burn.
  3. Preheat a grill pan or gas grill on medium-high. Grill the pork skewers until they are browned on all sides and cooked through, about 8 to 12 minutes, turning 4 times during cooking.
  4. Remove the skewers to a plate and allow to rest for 5 minutes.
  5. While the pork rests, grill the pita until lightly browned on both sides, about 1 minute per side. Remove the pita from the grill.
  6. To serve, spread some tzatziki sauce on the pita bread and top with the pork souvlaki, some slices of red onion, some sliced tomato and wrap.
